If you're bringing a car, we would recommend you spend one day heading out to the eastern end of the island to check out the WWII tunnels at Stoney Batter.
Man o War has a great scenic position by the water - a great place for a winery lunch if you have your own transport out to this end of the island :) You shouldn't need to book - and if it's high tide you can also swim from their bay. Drive the loop road back, to check out Orapiu wharf and the view from the road back out to the coromandel and other islands.

Our favourite island beach. Low key, not too overdeveloped, and with a local store and cafe just across the road.
Be aware that there's a main end, and a 'clothes optional' end (over the rocks at the western end of the beach).

Food scene
We are so lucky to have the most incredible little Italian pizza/pasta/gelato bar just up the road, run by a family from Calabria - if you're foodies you must have at least one meal there.
Seriously the best pizza we've had since our return to NZ from living in London and travelling in Italy. (They are not licensed though, so if you want wine with it you'd need to take it away and bring it back to eat on your deck here).
