“The Cathedral is either beautiful or sticks out like a sore thumb--depending on your interpretation. Construction was started by Jean Baptiste Lamy and chronicled in Willa Cather's Death Comes for the Archbishop. The church was designed by a French architect under Lamy's direction to be dissimilar from other "made of mud" New Mexican churches. The church is iconic for its French style architecture in the midst of the Southwest.”

The Maria’s tradition began in 1950 when Maria and Gilbert Lopez started a small take-out kitchen that offered traditional, Northern New Mexican cuisine. The small take-out business quickly became a hit and over the years has grown into a full service restaurant that is now a Santa Fe institution. It has built a history specializing in authentic, home-style New Mexican dishes made with traditional red and green chile, handmade tortillas, and made to order margaritas, using only 100% agave tequila. “A recognized leader in Southwestern cuisine, Chef Mark Kiffin has chosen to create and focus his menu around the true regional ingredients brought to the Southwest United States by the Spaniards. When a group of Spanish settlers from Mexico City founded Santa Fe in the late 16th Century they forever altered the course of cuisine in the Southwest. The first Spanish settlers brought many food items that were not indigenous to the region such as cattle and wheat. As Santa Fe was at the end of the 1500-mile Camino Real from Mexico City, its Plaza eventually became the trading center where cattle were traded and a new variety of seeds were sold for harvest. It is from these New World influences, along with the influences of the Mediterranean, that Kiffin has created his dishes as Contemporary American Cuisine.”
