My class ended up being a solo affair with Giovanni, not Stefano. Having the one-on-one class made it feel more special. He was quite knowledgeable and I had a really good time.

The class was taught on a plastic collapsible table using a hot plate and their were a bunch of extension cords on the ground that could have easily been tripped over. Cooking with a giant pot of hot oil in this way felt unprofessional and unsafe.

Come ready to learn and do. We were handed aprons and immediately got to work. It was such a fun and interesting experience. Our chef shared his stories and we learned the origins and regional differences in Arancini. Our 'little' oranges came out perfectly and we enjoyed sharing our success with the pasta class that was also learning in a very comprehensive class.

This was a very fun evening and even better than we expected! We had been looking for a vegetarian version on the street to no avail. Decided we should learn how to make our own and Stefano had a whole assortment of inspired vegetarian options for us. Loved the stories about this food history.

Truly a delight! Stefano, the head chef, didn’t teach our class, but Giovanni, the sous chef, did. He was clearly SO passionate about cooking and arancino. He shared about the history of arancino and how their origin is contested, but he’s from Catania so he has to say they’re from there. He had a cooking station set up on the restaurant patio so we didn’t melt in the kitchen heat and got to enjoy the weather outside. As a vegetarian, I deeply appreciated how much care he took to make sure I had options and nothing I cooked got contaminated with meat; everything was separated out for me and I got to use the fryer before the meat ones went in. I made 6 huge arancini which was more than enough. It was really fun to make, and the dinner was lovely with free wine and a limoncello shot. I would highly recommend this experience for a very friendly host and fun time!
