Nothing causes smiles quite like a multi-layered French pastry! Guests will learn to bake finicky canelés, a sugary siren hailing from Bordeaux, France. Full of vanilla beans and rum, the batter is let to rest for two days before baking in a mysterious copper mold coated in an amalgam of bee's wax and clarified butter. Notoriously hard to make and easy to burn, we'll enjoy the final stage of making and eating canelés. Guests will taste a freshly baked batch, and also prepare a batter.

The canelé sports a moist, custard-like center and a crisp and toasty cookie-like exterior. This class will demystify this pretentious dessert item for the everyday home baker with a tiny bit of after-market modification of a home oven by adding a 20lb steel plate.

I received training in baking pastries from the French Culinary Institute in NYC and the King Arthur Flour Baking facility in New Hampshire. I learned the foundations of western cooking from the Culinary Institute of America. I have been building homemade wood-fired brick ovens for almost a decade, and hosting regular baking and cooking tutorials since 2018. I have a PhD in science and engineering.

You will visit my kitchen to bake canelés, but most people close their eyes to enjoy a moment of heaven while biting through the toasty exterior to melt away the cake-y, custard-y in your mouth. All participants must wear a mask and sign a COVID19 waiver and indemnification.
