8:00 a.m. Meeting time at Casa Hamaca Guesthouse: coffee and sweet rolls available while you wait
8.15 a.m. Transport to Valladolid Public Market
8:30 Arrival to the market, to purchase the necessary ingredients.
9:30 Taking transportation back to Casa Hamaca
9:45 a.m. Return to Casa Hamaca to begin the hands-on part of the class. Master your favorite Mexican or Yucatecan food with our team of expert cooks, you will learn by observation and hands-on trial and error.
11:00 The food prepared during the class will be served for everyone in the room. You will eat with the staff, and they will be your judges.
Noon: End of Cooking Class

Class length depends on which options are selected: dishes like tamales have long cooking times.
It is easy to apply your new knowledge as we use ingredients that are available in most cities in the world.

Some of the Dishes you can learn:

Salbutes and panuchos (Mayan variations on tortillas)
Tamales wrapped in corn husks
Tamales wrapped in banana leaves
Meat Empanadas and Cheese Empanadas
Three types of salsas (pico de gallo, salsa verde and salsa Roja)
Shrimp ceviche, fish ceviche, and mixed seafood ceviche
Three Mayan vegetarian dishes (papadzul, chek, and sikil pak)


The dish or dishes must be chosen at least two days in advance.
Other things to note
We are open to accommodate your dietary preferences, keep in mind that the market is an open space where allergens are hard to track, as most foods are exposed.

Hi, my name is Denis Larsen, and I have been traveling to the Yucatan for 23 years, especially volunteering at small Mayan towns all over the Peninsula.
My experience cooking goes back to the early '60s when I was the cook on a commune. After that, I spent many years developing new food and beverages as a creative consultant in NYC.
I have a passion for traveling. I have lived and worked in the USA, Canada, Mexico, Spain, Switzerland, and Greece. Living overseas has helped me to become more open to new flavors and ingredients. I love food!
Fifteen years ago, I decided to stop going back and forth and settled to live and work in Valladolid, Yucatan, where I also ran an award winning bed & breakfast and a bar/restaurant
I enjoy living in Mexico and giving back to the community through programs like the Valladolid English Library.

Public Market of Valladolid, where local people do much of their shopping. There are lots of new and exciting ingredients to be discovered.

We may also need to stop at a local "supermarket"
