Was ihr unternehmen werdet

Cominceremo la nostra esperienza con la passeggiata nel bosco in cui vengono allevati questi sorprendenti animali che si cibano essenzialmente di ghiande, radici e tuberi. Proseguiremo poi con la visita del laboratorio in cui insieme prepareremo sia la salsiccia fresca che quella essiccata. Concluderemo l'attività con una ricca degustazione di pietanze a base di salsiccia e lardo di suino nero siciliano, accompagnata dai formaggi, dalle verdure di stagione e dalle bruschette di pane fatto in casa. A Palazzolo Acreide, uno dei centri abitati più antichi ed importanti della Sicilia che fa parte dell’Associazione “I Borghi più belli d’Italia” ed è iscritto nella lista del Patrimonio Mondiale UNESCO, la tradizione norcina ha origini antichissime che risalgono al tempo della colonizzazione greca. La salsiccia di suino nero siciliano (animale che ancora oggi viene allevato allo stato brado e semibrado) è da sempre la preparazione più pregiata. Può essere gustata fresca (alla brace o per insaporire altri piatti), sia essiccata. La salsiccia di suino nero siciliano di Palazzolo Acreide è Presidio Slow Food.

Wo ihr sein werdet

Visiteremo il bosco privato di Bauly, una foresta millenaria di lecci e querce di oltre 60 ettari in un feudo del '700 dove vive allo stato semibrado il suino nero e si trova anche il tartufo. Poi la macelleria Corsino, una delle più antiche di Palazzolo, aprirà solo per noi il suo laboratorio. Ed infine degusteremo i prodotti nella terrazza di una masseria immersa nelle colline del sud-est siciliano ricamate da una fitta trama di muri a secco

It is a gem experience for a foodie and chef and wine-lovers, learning about the rural side of sicily and the local food ingredient so priced in this region! I wish I can find more experiences like this in the future with slow food!

What an amazing experience! We received a great welcome at an amazing cafe where we tried local pastries and espresso. We then made a trip to where the pigs are raised and cared for. Then we drove through the woods where the pigs live naturally most of the year and saw their natural habitat. It was a beautiful, private oak forest. Then we ended the tour on a terrace overlooking the forest where we had an amazing tasting of black pork sausage, prosciutto and frittatas with local wine. An amazing experience and will definitelytry out other experiences through Damiano and his wife and chef, Alessia!!!

Damiano was an excellent host, who did a great job of connecting us with the "stars" of this experience - Livio (The black pig farmer), Salvatore (butcher), and their wives, mother, and children who welcomed us like we were long lost family. As someone who raises livestock, I was INCREDIBLY impressed with Livios passion for his animals, and even moreso, the land he grazes them on. Pigs can be very destructive creatures who can destroy all the nutrients that the ground has to offer without careful management. His land was lush, and full of life, with abundant acorns, mushrooms, truffles, native grasses, trees, etc. I wish my pastures were this healthy. On the day we were there, the pigs were pinned up for government mandated health checks, but Livio took us for a tour of the pasture where the pigs normally are. Salvatore (The butcher), his daughters, and his mother showed us the process for making his sausage, giving us plenty of samples and some wine along the way. All were incredibly friendly. The final stop was at the family hotel/restaraunt/estate, which was very nice, and very impressive! The wives (I didn't catch their names! Sorry!) cooked us an amazing meal, including not only black pig, but truffles and mushrooms from their property. We were so stuffed by the time we left, that we skipped dinner that night! Most of the family spoke very little english, and we speak even less Italian, so Damiano had his work cut out for him translating, but he did a great job, and was pleasant the whole time. We've done a lot of similar experiences throughout the world, and this was certainly one of the best and most memorable. I highly recommend it!
